Homemade Coconut Ice Cream (Gluten + Dairy Free)

I love homemade ice cream. I absolutely live for it. My dad always makes fresh strawberry ice cream, and I can't get enough of it. Store bought ice cream is amazing, but eating fresh ice cream? Nothing can compare to that.
So I decided that it was time to make some for myself. And I thought that I'd use coconut milk, too, to make it dairy free. When I say that this is gluten and dairy free, it makes it sounds so mush healthier, doesn't it? I'm not sure that it is or not, but thats ok. Go ahead, indulge yourself with this rich, creamy ice cream. You won't regret it.
Before I start the recipe, know that you will need an ice cream maker. I'm sorry to those of you who don't have one, but there's no other way to make it that I know of.

You will need:
+ 3 cups of full fat coconut milk
+ 2 1/2 tbsp strong green tea
+ 1/2 tsp lemon juice
+ 2 tbsp honey

1. Mix everything together. I used a stand mixer, but go for whatever works best for you.
2. When everything is well mixed, put it in the fridge for two hours.
3. After this, all you have to do is put this mixture in your ice cream maker and follow the institutions (every one is a little different)
Thats it!
If you try this, I would love to know! Email me at littlemoondragon@outlook.com or leave a comment below ♥
Have a lovely weekend!

    1. Thank you so much Bash! I'm not sure if that would work, though, you need something a little heavier. Coconut milk is more like a cream, and that's why it works ♥

  16. YUM! This sounds way healthier than the options I've seen in stores. I love making recipes myself so I can have control over the sugar/salt/etc. contents. PS - Eee that teacup is adorable!

  22. This is great! I don't have an ice cream machine, but would it be good to eat after step 2? I'm sure it would be a worthy investment to get a machine, but I'm impatient and want ice cream tonight, haha :) Thank you for the recipe!

    1. Thank you so much Stephie! Hmm, it might work, I'm really not sure. It might not be the same consistency, but you could try putting it in the freezer for longer ♥
