Once in a Blue Moon Cupcakes

I've wanted to have a little full moon party for ages, and I thought what better a time to do that than a blue moon? Unfortunately, planning didn't work out so it was just me, but I thought I'd make myself some mini cupcakes anyway. And why not? Even though the blue moon was yesterday, these cupcakes would be perfect for any time of the year.

Cupcake Ingredients:
♥ 1 cup of all purpose flour (I used a gluten-free blend)
♥ 1/4 cup + 1 tbsp sugar
♥ 1 + 1/2 tsp baking powder
♥ 1/4 tsp cinnamon
♥ 2 eggs
♥ 1/4 cup almond milk (or milk of your choice) + 1/2 tsp vanilla

**I used this recipe for dairy-free buttercream icing, but it didn't really work**
1. Preheat your oven to 350° F
2. Mix together the flour, sugar, baking powder, and cinnamon.
3. In a separate bowl, blend the milk and vanilla and eggs.
4. Add the liquid mixture to the dry mixture and blend well. 
5. Bake for around 12 minutes.
6. Let cool, then decorate as you please.

    1. Thank you May! It's not at all, I just looked it up recently myself. There are a few different definitions, but Saturday's was a seasonal one which means "the third of four full moons in a single season" ♥
